Recorda que tamb\u00e9 te la portem a casa!<\/p>\n<p>Com deia Josep Pla&#8230;<\/p>\n<p>En el curs de la meva vida he conegut, en l&#8217;espai de l&#8217;Europa occidental, cinc formes de bullit, totes pr\u00e0cticament iguals, per\u00f2 d&#8217;una matisaci\u00f3 tan diferent que no resisteixen la comparaci\u00f3. En el nostre pa\u00eds, el m\u00e9s gran bullit \u00e9s la carn d&#8217;olla, el plat m\u00e9s tradicional, arcaic i habitual que pot presentar. En els presents moments, potser, l&#8217;afirmaci\u00f3 no \u00e9s ben b\u00e9 exacta. Sigui com sigui, jo n&#8217;he menjada des de la inf\u00e0ncia, i, per tant, he estat criat en la cuina tradicional. Llavors, l&#8217;escudella i carn d&#8217;olla es menjava sis dies de la setmana, i el diumenge es reposava, amb l&#8217;arr\u00f2s dominical.<\/p>\n<p>Amb la carn d&#8217;olla ha passat, aquests \u00faltims anys, una cosa fant\u00e0stica. Abans de l&#8217;\u00faltima guerra civil, fou el plat accessible per definici\u00f3, fins al punt que el menj\u00e0 tota la poblaci\u00f3 del pa\u00eds, amb aquell sentit de l&#8217;estalvi i de l&#8217;equilibri social que sempre ens caracteritz\u00e0. S\u00ed. Hi ha hagut molts de canvis. De vegades sembla, per\u00f2, que anem molt endavant perqu\u00e8 els motors d&#8217;explosi\u00f3 fan tanta fressa. En altres moments sembla que retrocedim d&#8217;una manera clara.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignright wp-image-21811 size-full\" src=\"https:\/\/i0.wp.com\/www.restaurantestevet.com\/wp-content\/uploads\/IMG_5067-rotated.jpeg?resize=480%2C640&#038;ssl=1\" alt=\"\" width=\"480\" height=\"640\" srcset=\"https:\/\/i0.wp.com\/www.restaurantestevet.com\/wp-content\/uploads\/IMG_5067-rotated.jpeg?w=480&amp;ssl=1 480w, https:\/\/i0.wp.com\/www.restaurantestevet.com\/wp-content\/uploads\/IMG_5067-rotated.jpeg?resize=225%2C300&amp;ssl=1 225w\" sizes=\"(max-width: 480px) 100vw, 480px\" \/>He esperat durant molts anys que els economistes diguessin alguna cosa sobre tot aix\u00f2 tan estrany que ha passat en l&#8217;alimentaci\u00f3, per\u00f2 els economistes no han dit res clar, per ara. El que l&#8217;experi\u00e8ncia sembla demostrar \u00e9s que, en una situaci\u00f3 com aquesta, la vida dels pobres \u00e9s cada dia m\u00e9s cara i la dels rics \u2013sempre, s&#8217;ent\u00e9n, en el terreny de la relativitat d&#8217;una i altra banda\u2013 \u00e9s cada dia m\u00e9s barata.<\/p>\n<p>No \u00e9s necessari, em sembla, de descriure la carn d&#8217;olla catalana. El lector sap perfectament de qu\u00e8 es tracta. \u00c9s un plat la difusi\u00f3 del qual havia estat tan vasta, que ha perdut totalment la solemnitat. El nostre bullit cont\u00e9, per\u00f2, un element d&#8217;originalitat que no es troba en els altres. La pilota cont\u00e9 una s\u00e8rie d&#8217;elements picats i posteriorment consolidats d&#8217;una manera real per\u00f2 lleugerament fl\u00e0ccida. La pilota no t\u00e9 la forma de la pilota corrent, vull dir rodona; m\u00e9s aviat t\u00e9 una forma tubular allargada. La pilota agrada a la ciutadania. \u00c9s un element que d\u00f3na facilitats a la dent, i aix\u00f2 \u00e9s sempre apreciat. Hi posem una mica de tot, per\u00f2 sense que res predomini massa. Per exemple: en el <i>cocido<\/i> castell\u00e0, hi posen molts cigrons, la seva pres\u00e8ncia hi \u00e9s considerable. En la nostra carn d&#8217;olla, aquest nombre no \u00e9s excessiu: \u00e9s equilibrat. Cada pa\u00eds aprofita el que t\u00e9 per a real\u00e7ar-ho. Les persones que busquin el c\u00e8lebre i anomenat seny catal\u00e0 faran segurament el viatge en va. \u00c9s en la cuina que aquesta tend\u00e8ncia s&#8217;ha imposat d&#8217;una manera vista. \u00abEn la cuina \u2013solia dir la meva mare\u2013, s&#8217;hi ha de posar de tot&#8230;, per\u00f2 poc!\u00bb<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-21808 size-full\" src=\"https:\/\/i0.wp.com\/www.restaurantestevet.com\/wp-content\/uploads\/IMG_8308-rotated.jpeg?resize=480%2C640&#038;ssl=1\" alt=\"\" width=\"480\" height=\"640\" srcset=\"https:\/\/i0.wp.com\/www.restaurantestevet.com\/wp-content\/uploads\/IMG_8308-rotated.jpeg?w=480&amp;ssl=1 480w, https:\/\/i0.wp.com\/www.restaurantestevet.com\/wp-content\/uploads\/IMG_8308-rotated.jpeg?resize=225%2C300&amp;ssl=1 225w\" sizes=\"(max-width: 480px) 100vw, 480px\" \/>Tota la resta \u00e9s bastant igual: la gallina, els menuts del pollastre (el fetge i el pedrer), la vedella, la cansalada, que no ha d&#8217;\u00e9sser mai r\u00e0ncia. I la botifarra negra o clara, \u00e9s clar, perqu\u00e8 \u00e9s el pa\u00eds ideal de les botifarres. I les patates, la col, les pastanagues, els cigrons i quatre mongetes seques. Tot plegat constitueix un petit m\u00f3n molt apreciable. Ara, quan es comparen les carns d&#8217;olla que es mengen avui amb les que presentaren les grans masies del segle passat, especialitzades en la possessi\u00f3 de tants porcs a la sal o per matar, amb les orelles, cues, els morros, peus i magres corresponents, \u00e9s possible de fer-se una mica de c\u00e0rrec de com tot s&#8217;ha anat aprimant.<\/p>\n<p>El <i>pot-au-feu<\/i> franc\u00e8s, a part les difer\u00e8ncies que proposen els llegums del pa\u00eds ve\u00ed, presenta una novetat: que \u00e9s la pres\u00e8ncia del bou en el plat. Nosaltres tenim una cuina sense bou, i, d&#8217;aix\u00f2, se&#8217;n ressent la carn d&#8217;olla d&#8217;una manera molt acusada. Formem part d&#8217;un m\u00f3n d&#8217;\u00e0nimes p\u00e0l\u00b7lides, m\u00e9s aviat donades a cantar que a raonar, i de cossos o massa grassos o massa esprimatxats \u2013sense que aix\u00f2 vulgui dir que no hi hagi dones d&#8217;una gran bellesa. Ens falta el bou \u2013el clima, la pluja, els prats- per a arribar a obtenir aquell punt de corpul\u00e8ncia desitjat. Si arrib\u00e0vem a tenir el clima adequat a l&#8217;alimentaci\u00f3 normal de l&#8217;\u00e9sser hum\u00e0, potser ser\u00edem m\u00e9s pl\u00e0cids, m\u00e9s comprensius i m\u00e9s tolerants. Passem amb massa facilitat de la indifer\u00e8ncia eviterna a l&#8217;arrauxament momentani. Estem massa dominats pels nervis, per la impressionabilitat, sovint gratu\u00efta, per l&#8217;angoixa que produeix el buit de l&#8217;est\u00f3mac quan s&#8217;ha menjat d&#8217;una manera extravagant. Trenta dies m\u00e9s de pluja l&#8217;any i el pa\u00eds seria molt mes agradable.<\/p>\n<p>La <i>pot\u00e9e flamande<\/i> \u2013que \u00e9s el quart bullit a qu\u00e8 feia refer\u00e8ncia\u2013 tendeix a una simplificaci\u00f3 molt m\u00e9s visible i acusada: el bou, la vedella \u2013res d&#8217;animals de corral\u2013 i els llegums del nord, que potser no s\u00f3n tan abundants com les dels pa\u00efsos assolellats i menys abundants que a Fran\u00e7a, per\u00f2 f\u00e0cilment importables.
